Creamy Garlic Potato Medley

This has to be one of the easiest and most delicious household staples of mine! You'd think a batch like this would stretch, but they are typically wiped out in less than 24 hours in my house, with only my hubbs and myself getting after them!

Creamy Garlic Potato Medley

Prep Time: 10 mins

Inactive Cook Time: 35-40 mins

Total Time: About 45-50 mins

Yield: 4-6 servings


What You'll Need:

  • 9 x 13 glass baking dish

  • 1 & 1/4 lbs baby potato medley, cleaned and quartered (make sure potatoes are cut as close to the same size so they cook evenly, you may only need to halve the smaller ones)

  • 3/4 tsp kosher salt

  • 1/4 tsp pepper

  • 1 1/2 tsp rubbed sage

  • 3 cloves garlic, minced, or I like prepared crushed cloves that dissipate (I find these at Target in the freezer section)

  • 2 T butter

  • 2 & 1/2 cups heavy cream

Topping:

  • 1/4 c finely grated parmesan

  • 1/4 c breadcrumbs

  • 1/2 tsp dried flat leaf parsley, plus more for garnish


How to Prepare:


  1. Preheat oven to 400 degrees.

  2. Place your quartered potatoes in a 9 x 13 baking dish, spread out in an even layer, and not piled all over each other. (If you watch my video, I made the mistake of doing this because my baking dish was too small, and my cream overflowed and I had to broil to get the crusty topping, don't make this mistake like I did)! ;)

  3. Combine your cream, garlic and butter in a large bowl and warm in the microwave 2 minutes, stirring every 30 seconds until butter is about melted and cream is hot, then pour on top of your potatoes and lightly stir.

  4. Combine your breadcrumbs, parmesan and parsley in a bowl and mix with a fork, then sprinkle enough on top of the potatoes to coat all over.

  5. Bake in the oven for about 35-40 minutes, until bubbly and potatoes are fork tender.

Potatoes are best with cream, garlic and herbs in my opinion, so why not bathe them in all three?! I know, these are the farthest thing from "healthy," but it's winter, so why not try to stay warm by adding these to our "diet?" ;)
