Crockpot Chicken

A few simple seasonings and just a few hours of time yields the most perfect, tender, crockpot chicken that is "all purpose" and can be used throughout the week for a plethora of dishes! Pile it on some mixed greens, in soup, or make chicken sandwiches!

What You'll Need:

  • 1.5 lbs boneless skinless chicken breasts

  • 1/2 tsp kosher salt

  • 1/4 tsp pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 2 Tbsp olive oil

  • 4 Tbsp butter


How to Prepare:

  1. Season chicken breasts on both sides with all seasonings, then add in butter and drizzle of olive oil.

  2. Cover and cook on "low" for about 3 hours (maybe a little more time depending on size of chicken breasts). Chicken should register 165 with a meat thermometer.

  3. Shred chicken, and store in an airtight container in the refrigerator and keep up to 5 days. Use for whatever you like!


Ideas for this chicken:

  • Tacos, nachos or quesadillas

  • Chicken sandwiches--add buffalo sauce and ranch or blue cheese and pile it on a bun or tortilla for a buffalo chicken sandwich or wrap

  • Add bbq sauce for bbq pulled chicken sandwiches

  • Add in a pot of soup

  • Top on any salad, such as chicken caesar or strawberry fields

  • Chicken salad sandwiches---and so much more!

When I'm feeling relatively uninspired and have some chicken breasts sitting in my meat drawer, this is my go-to method to have some versatile meat on hand that I can use for just about anything! The seasonings add just enough flavor to the chicken and are versatile enough to put on pretty much anything! This method also yields chicken that is perfectly cooked, and good enough for any picky eater to dig into!
