Savory Meatloaf

Tips to Consider:
First things first, you're going to want to use beef that's organic preferably, and 90/10 fat content. Why? Organic beef has a profound flavor difference from the other stuff, I promise you, it's worth the extra few bucks. Also, 90/10 beef has more density to it, which is great for making a solid meatloaf because it will hold it's form better. Also, if the fat content is too high then the meatloaf will shrink quite a bit and you'll lose a lot of volume, or better yet, portions to your loaf. You'll also want to make sure when forming your loaf that it's shaped as evenly throughout so that it cooks evenly. Even-ness in itself always means "even" cooking. Don't be sloppy!

Now, meatloaf is one of those things that's like a culinary blank canvas, so it's fun to play with ingredients in these situations. That being said, I've tried many different things in my meatloaf and I've found that my favorite things to put in it are: petite diced tomatoes, a little chopped yellow bell pepper, sweet onion, fresh minced garlic, an egg, ketchup and plain breadcrumbs (gluten free are fine too, if you're celiac) for binding, and of course, don't you dare forget that salt and pepper! So simple and so satisfying!

Yield: 4 servings
What You'll Need:
1 lb organic grass fed beef, 90/10
1/2 heaping cup canned petite diced tomatoes, juices too
2 large cloves minced garlic
1/2 cup sweet onion, medium dice
1/4 cup yellow bell pepper, medium dice
1/4 cup organic ketchup
1/4 cup breadcrumbs
1 egg, lightly beaten
1 1/4 tsp kosher salt
1/2 tsp pepper
Topping:
1/4 cup organic ketchup
1/4 cup bbq sauce (Sweet Baby Ray's hickory brown sugar is my fav)
How to Prepare:
*Preheat your oven to 350 degrees F
1. Get your mis en place! Chop your bell pepper and sweet onion to a medium dice, ensuring your knife cuts are even. Mince your garlic and set these ingredients aside.
2. Place your ground beef in a mixing bowl and break it down using a fork to get it to a "crumble" before adding your mix-ins. Once you've broken the meat up, add in your petite diced tomatoes, onion, pepper, garlic, salt and pepper and give a light mush to distribute the ingredients throughout the meat.
3. After this, add your lightly beaten egg to the mixture. Next, dust half the breadcrumbs evenly across the mixture so it gets distributed throughout the meat. Give it another mush and then add the rest. Now, form it into a cute lil loaf on your lined baking sheet or place into your meatloaf pan.
4. Combine the ketchup and bbq sauce into a bowl and mix to combine. Then, using a spatula, dump on top of your meatloaf and spread around evenly to coat the top. Place in the oven and bake for about 45 minutes. Let cool a few minutes and then enjoy with some mashed potatoes and steamed veggies! :)
