Arugula Salad with Pear and Bacon Recipe

This easy and hearty salad recipe can serve as a meal in itself with all the right fixings!

Pear and Bacon Arugula Salad

Prep Time: 15 mins


Yield: 2 generous servings


What You'll Need:


  • 3 heaping cups arugula

  • 2 heaping T gorgonzola (blue cheese or feta will also work)

  • 2 T pecan chips

  • 2 T pomegranate seeds (optional)

  • 1 perfectly ripe pear, cut into bite size pieces

  • 2 pieces prepared crispy bacon

  • 1/3 c fruity vinaigrette (such as raspberry)


How To Prepare:


1. Put 2 slices of bacon on a sheet pan lined with foil and bake at 400 degrees F for 12-15 minutes, or until perfectly crispy.


2. Lay on a paper towel to cool and absorb grease.


3. Break up your bacon to crumbles using a knife or clean hands and set aside.


4. Place your arugula in a large salad bowl, then add in all your fixings, dressing last. Toss to combine. Enjoy!


Looks relatively fancy, but this fool proof salad recipe is easy to assemble and makes for a quite impressive salad! Make a big batch for a crowd, or enjoy for a weekend lunch or weeknight dinner with a loved one! :)
